Abbott and Judy Yaghi, owners of AJ’s Pizzaria in Leander, have been in the restaurant business for more than 15 years. So, it is only fitting that their story began at a restaurant. “I was a waitress at a Mediterranean restaurant and Abbott would come in. He would only get iced tea and then tip me $5. He finally asked me to start working in his restaurant, and the rest is history,” Judy said. The Yaghis moved from Buffalo, N.Y., more than 10 years ago. Though Texas is now home, it was in Buffalo that the couple began their life in the restaurant business. Abbott Yaghi, whose brother owns local Yaghi’s New York Pizzeria shops, began as a dishwasher in a pizzeria in 1992. He continued working his way up to a driver and then a pizza maker, before taking advantage of the opportunity to purchase the pizzeria in 1995. In 1999, the couple sold their pizzeria in Buffalo to a longtime employee before coming to Texas. Judy said she believes it is the atmosphere and gratitude that has kept employees and guests coming back to their pizzeria in Leander. “We keep employees because we treat them like family,” she said. Feeling like family helps employees care about the food they serve. This dedication means the team at AJ’s Pizzaria strives for a quality product, Judy said. The name AJ comes from a combination of the couple’s initials, and they said they will not put their name on anything that does not meet their expectations. “Nothing leaves the store unless it’s good. It’s always consistent,” Judy said. “We make our own dough, dressings and pizza sauce. We purchase our produce fresh each day.” The dough is still stretched and tossed by hand at AJ’s, and nothing goes out to a guest without being checked first, she said. “The person opening the restaurant and creating the menu should be the one actually preparing the food,” she said. Quality ingredients and happy employees and customers are a must at AJ’s Pizzaria. The Yaghis also wanted to make their pizzeria “convenient and efficient for guests.” This motto is reflected in menu items such as the family special, where guests receive a free 14-inch cheese pizza with the purchase of any 16- or 18-inch specialty pizza. Knowing that children often choose plain over special ingredients, the owners said they wanted to make dinner for families easy and affordable. They also pride themselves on keeping menu prices the same, so that guests always know what to expect. In April, AJ’s Pizzaria will celebrate one year at its current location on US 183 north of Old FM 2243. The couple operated a second location along US 183 near Osage Drive, but decided to focus their attention on quality and service at one location. They have been happy with the change, saying they can take better care of their guests and employees. “Our goal is to stay here and focus on this one location and build business,” Judy said. Owner’s recommendations At AJ’s, pizza comes in 14-, 16- and 18-inch sizes, starting at $9.99. The feta pizza ($16.99 for large size) is one of the most popular, topped with extra-virgin olive oil, garlic, basil, black olives, fresh tomatoes, spinach, mozzarella cheese and feta cheese. In addition to pizzas, calzones and subs, the fresh, all-beef burgers ($4.25 or $4.75 with cheese) have become increasingly popular over the past year, Judy Yaghi said. Special offers Lunch specials ($4.99) are offered weekdays from 11 a.m.–2 p.m. and include a drink and choice of two cheese pizza slices, meatball sub, gyro sandwich, plain calzone or large garden salad. Pick-up specials include free 14-inch cheese pizza with purchase of any 16- or 18-inch specialty pizza, one 14-inch two topping pizza and two sodas ($11.99) and one 16-inch two topping pizza with two sodas ($13.99).
